Omelet Martabak

Indonesian snack with stuffing egg, choped onion, garlic, celery, scallion and green cayenne. Fry with little oil. Still crispy even cold. In my hometown, vendors sell it, so we can find easy as street food when afternoon until midnight.





Ingredients :
  • 300 grs of all purpose flour.
  • 3 tbsp olive oil.
  • 1 egg.
  • Boil water is required.
  • Salt as needed.
  • 2 eggs and green chayyenne pepper for filling. More good if added chicken finely chopped or minced meat and spring onion.

Instruction :
  1. Boil water.
  2. Mix all of ingredients (flour, egg, salt, and olive oil.). Pour hot water gradually, and stir with wood spoon, after that kneaded by hand until no sticky on your hand. Shape round and let it 10 minutes.
  3. Devide the dough 7 pieces and shape round the small balls.
  4. Pour little oil on the milled board. Take a dough and milled thinly as possible.
  5. Prepare filling, beat lightly egg and chopped green chayenne pepper and add a pinch of salt. You can add celery if you like. I didn't have stock of celery on my freeze.
  6. Heat frypan with medium flame and pour little oil. After oil hot, put the dough onto frypan.
  7. Pour 2 tbsp egg on the dough.
  8. Fold the dough so that filling doesn't come out.
  9. Ready to be served when hot. After fried, skin is so dried, not much oil.
