Grilled Taliwang Chicken

Taliwang Chicken, the cuisine that has base ingredients such as chicken marinated with some spices typical of Lombok Islamd (NTB - Indonesia) such as chili, onion, garlic, shrimps paste, gallingale, nutmeg and etc. The original, chicken burnt on the fire, but a bit complicated for me when I have to be burned. For that, after smeared chicken with seasoning, I roasted the chicken in the oven until get the patches are burned. Commonly served with hot white rice and stir fry water spinach, but here I serve with sliced of baquette and some salad.

Ingredients :
  • 1 chicken, cut 8 pieces.
  • 2 tbsp lemon juice.
  • Salt is required.
  • 100 ml water.
  • 1/2 tsp sugar.
  • 2 tbsp vegetable oil.
Ingredients of spices :
  • 1 tbsp red chilies paste.
  • 3 red cayenne pepper.
  • 1/2 tsp ground gallingale.
  • 1/2 tsp fried shrimps paste.
  • 1 medium onion.
  • 3 cloves garlic.
  • 1 tomato.
  • 5 hazelnut.
Instruction :
  1. Spread chicken with lemon juice and salt. Let it for 25 minutes.
  2. Puree the spices. Prepare the frying pan and heat oil, sautè spices until fragrant.
  3. Put chicken into spices until chicken get white color, pour lemon juice and stir until chicken and spices combine evenly.
  4. Pour water and cooked until water dried, chicken cooked and spices absorbed into chicken.
  5. Preheat oven 180°C for grill. Grill chicken until you get the burnt patches.
  6. Ready to be served with the remaining season, sliced of baquette and salad.
