Yellow Pickle Pontianak

Yellow Pickle is one of many kind Indonesia pickle. Yellow Pickles originated from Sambas (West Kalimantan-Indonesia). History about the dish, many years ago when Sambas City is a kingdom with a King named Sultan Saefuddin. All of family memmbers of Sambas Sultanate, their houses with yellow color and some food called foods of yellow houses. Yellow means glory. Maximum, Melayu Palace with yellow color as glory symbol. Have many foods and sweets were dominated but the yellow color, it means the food and cake are belong to the yellow houses (the imperial family). The Yellow Pickle is one of owned food the royal family. To make the yellow pickle with stir fried, so fragrant and taste sour, spicy and little sweets.

Ingredients :
  • 1 carrot, cut lenghtwise like matchsticks.
  • 1/2 cucumber, cut lenghtwise like matchsticks.
  • 1/4 green papaya, cut lenghtwise like matchsticks.
  • 2 green cayenne peppers, thinly sliced.
  • 1/2 tsp ground turmeric.
  • 1/2 onion.
  • 2 cloves garlic.
  • 2 tbsp tamarind juice.
  • 2 tbsp vegetable oil for saute.
  • Salt is required.
Instruction :
  1. Puree onion and garlic. Heat oil and stir fry onion, garlic, ground turmeric until fragrant.
  2. Add salt and green cayenne pepper and tamarind juice, stir.
  3. Add carrot, cucumber, green papaya, stir fry until vegetable is withered.
  4. Ready to be served with hot white rice.
