Crispy Peanut Crackers (Indonesian's Peyek)


Indonesia have many kinds of crackers. One kind of crackers from Indonesia is Rempeyek (Peanut Brittle). Ther crackers is originally from Java. The rempeyek is made of rice flour but for dressing you can sprinkle with peanuts, lime leaves, or dried small shrimps.




Ingredients of mashed flavoring:
  • 4 cloves garlic.
  • 4 - 5 hazelnut (I used nocciola).
  • 1 tsp ground coriander.
  • 1 egg.
  • 100 cc thin coconut milk.
  • 10 - 15 lime lives
Main Ingredients :
  • 250 gr rice flour.
  • 1 tbsp tapioka starch.
  • 300 ml thin coconut milk.
  • Salt as taste.
  • 200 gr penaut, halved.
  • 1 lt oil to deep frying.
Instruction :
  1. Mash garlic, hazelnut, ground coriander, egg and lime leaves with thin coconut milk. set aside.
  2. Mix rice flour and tapioca starch.
  3. Pour the mashed flavoring and stir with whisk hand until combine evenly.
  4. Pour the thin coconut milk gradually, stirring constantly until well blended and the batter is getting smooth and get the desired consistency.
  5. Preheat oil, use ladle to pour the batter into frypan.
  6. Take a little batter and add peanuts, pour into hot oil from the side of the edge to release it self and float to the middle.
  7. Fry until golden brown. Do it untuk the batter finish.
